Coconut rice pudding with pear and berry compote Chorizo, pear and chickpea tapas bowls
- Saute pears in butter until soft. Add honey and cook until sticky.
- To make crumpets: Whisk egg whites until soft peaks. Beat egg yolks
- Mix all pancake ingredients and egg yolks together until just combined.
- Fold through egg whites and then sauted pears.
- Heat butter in a non-stick pan and fry dollops of batter until golden all over and cooked through.
- Serve topped with yoghurt, honey, fresh pear and a dusting of cinnamon
